¾ cup | Freshly-Boiled Water |
⅓ cup | All-Purpose Flour |
3 tbsp | Granulated Sugar |
½ tsp | Baking Powder |
½ tsp | Cinnamon |
½ cup | Pumpkin Purée |
1 | Egg |
2 tbsp | Vegetable Oil |
Ready in minutes, this quick and easy-to-make mini pumpkin cake is flavoured with Orange & Cinnamon Spice Tea for a fragrant and flavourful treat.

HOW TO
- Pour 3/4 cup (175 mL) freshly boiled water over tea bags; let steep for 4 to 5 minutes. Remove tea bags; let cool slightly.
- Whisk together flour, sugar, baking powder and cinnamon. In separate bowl, whisk together tea, pumpkin purée, egg and oil until blended; stir into flour mixture just until combined.
- Divide batter between 2 large greased microwave-safe mugs. Microwave on High for 1 1/2 to 2 minutes or until set. Let cool for 5 minutes before serving.
Tip: Dust with icing sugar or serve with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
